Solomon Receives 2001 Meats Research Award
Dr. Morse B. Solomon was honored with the 2001 Meats Research Award at the American Society of Animal Science Awards banquet in Indianapolis on Friday, July 27.
With advanced degrees in meat science and muscle biology, Solomon, research leader for the USDA Meat Science Laboratory, has focused his research on the regulation of growth and development of different biological slaughter animals for producing high-lean/low-fat meat, especially in relation to improving meat quality and compositional/nutritional value. Recently, Solomon, has been a pioneer in hydrodynamic pressure technology (HDP).
Solomon has authored and/or co-authored over 150 referred articles and technical reports, more than 186 abstracts, and 5 book chapters.
Solomon earned his B.S. from the University of Connecticut, a M.S. from the University of Kentucky, and a Ph.D. from the University of Florida.
The 2001 Meats Research Award, sponsored by the Elanco Animal Health, recognizes research excellence in meat science.
