Dr. Chris Calkins, professor of animal science, and Dr. Jeyam Subbiah, professor of biological systems engineering, received the Innovation Business of the Year award from the Nebraska Business Development Center for their faculty startup company Goldfinch Solutions. The company is pioneering multispectral imaging technology to identify tender beef at the packing stage of production. According to this press release the technology “is capable of predicting whether a piece of meat will be tender, intermediate or tough with very high accuracy.”

“We feel cattle that rate ‘Choice’ also merit a tenderness guarantee,” Calkins said in the press release. “If we can screen those cattle and provide that guarantee, we believe consumers would pay a premium for that meat.”
