Meat Science and Muscle Biology Symposium I

Don't miss the opportunity to join us in Austin, Texas at the 2019 Annual Meeting and Trade Show. There will be a plethora of symposia topics to choose from.

The Meat Science and Muscle Biology Symposium will be held on Tuesday, July 9th. Dr. Steven Shackelford - recipient of the Meats Research Award - will begin the symposium with a discussion of genomic control of fatty acid profiles in beef. In addition, researchers from across the country will discuss the nutritive value of meat and the effect of changing the fatty acid profile on meat color stability and palatability.
